Chroma 6.75" Professional Hakata Santoku Knife

The new Hakata Santoku P40 19cm knife is a combination of the Santoku and Chef's Knife. That makes it a multi-use knife, perfect for cutting meat, fish and vegetables.

Chroma is a manufacturer that bridges the gap between Japanese tradition and the European design with the type 301 series. Chroma type 301 cutlery are designed by F.A. Porsche, who worked closely with chef of the decade, Jörg Wörther, in order to develop the final shape of the handle, which is optimized for maximum usability. The Chroma type 301 knives follow faithfully the Japanese philosophy, which dictates a knife to be lightweight and flexible so that it feels like an extension of the user's hand.

They are made of high-quality Japanese 301 steel, a lightweight material which has a 58-60° hardness rating in the Rockwell hardness scale. The type 301 knives are harder than most of the non-Japanese knives and among the hardest knives within their price range. Because of this, each knife maintains its sharpness longer.

Chroma Type 301 Knives must be hand washed after every use.  Never place these knives in the dishwasher, as it could damage and dull the blade.  A dull knife blade is the single most common cause of knife related injury in the kitchen.  Type 301 Knives should only be sharpened using the original Type 301 whetstone.  Using a sharpening steel could damage the blade.  To help maintain the edge of your knife only use wooden or plastic cutting boards.  It is recommended that Type 301 knives be sharpened daily when used in a professional setting, and about every six months for hobby cooks.
